This is one of the most delicious and refreshing breakfast options!! My lemon blueberry overnight oats. Not to mention they also are incredibly easy to make and perfect for summertime too.

These overnight oats take just 5 minutes of effort to put together. I love a sweeter breakfast in the morning. And it can be tough to have something to satisfy your sweet tooth while also have a good amount of protein in it. But these oats hit the spot. They’re creamy, sweet and have protein in them from yogurt, hemp seeds and if you want to add some vanilla protein powder you can.

I find that overnight oats are one of the most underrated breakfast recipes to make. I have been a big overnight oats girl for nearly a decade. And I still crave them regularly. They’re so versatile, easy to eat on the go and they are nutritious and so tasty.

These oats keep you full through the mooning and I love that this lemon blueberry version is sweet from the blueberry jam. You can make the oats sweeter by adding more maple syrup too. I try to do little to no sugar as the berries sweeten this enough for me. But if you want sweeter, go for it. They’re easy to customize to work for you.

What ingredients you need to make lemon blueberry overnight oats:

  • Gluten-free rolled oats – you can use regular rolled oats if you prefer
  • Chia seeds or hemp seeds – either seeds can work for this. I like using hemp seeds for more protein 
  • Non-dairy milk – you can really use any milk. I lie to use almond milk or coconut milk for this recipe 
  • Vanilla extract – love adding this in for flavor 
  • Lemon – you’ll need lemon zest and lemon juice for this recipe
  • Coconut yogurt – or your go-to yogurt 
  • Maple syrup to taste – if you want sweeter, add more
  • Blueberry jam for layering – you can use store-bought or my homemade version is so easy and ready in 5 minutes!
  • Extra blueberries – for layering. I like to use fresh but frozen can also work
  • Vanilla protein powder – optional but I love to add!

How to make lemon blueberry overnight oats:

  1. In a medium bowl, add the oats, seeds, milk, lemon zest, lemon juice, vanilla extract, yogurt and maple syrup together
  2. Cover the bowl then add to fridge for at least 2 hours or overnight
  3. When ready to serve, layer with jam and blueberries and enjoy! I like to use these jars

FAQs and tips on making these overnight oats:

  • How long do oats need to soak for before eating? 2 hours minimum but I like to soak them overnight if possible. It takes time for the oats to absorb the liquid and the consistency is better the longer they soak for.
  • Can I eat these overnight oats warm? Yes or cold. I like to eat them cold from the fridge. But if you prefer warm or hot oats, you can warm them up in the microwave or stovetop too.
  • How long can I keep these in the fridge? About 5 days in the fridge! I don’t recommend freezing overnight oats.
  • Can I double the recipe? Absolutely! If you want to make more then double the quantities to make a larger batch.
  • I don’t love blueberries, can I use another berry? Absolutely! Try raspberries, strawberries or blackberries instead.
