The Best Ever Gluten-free Apple Blondies made with a few simple ingredients for a classic fall apple dessert!

Ok ok, full disclosure – I did not come up with the idea of making apple blondies.

The woman who birthed my crazy self (hey ma) has been making these epic apple blondies for whats feels like forever. They are one of our family favorites and even Jordan who isn’t the biggest dessert guy, loves them!

I made a few tweaks to the original recipe and made these gluten-free, a little lower in sugar and with no refined sugars at all. The classic recipe uses brown sugar and cane sugar and while it tastes amazing, I need dessert everyday so I try to limit the refined sugars over here.

But I did leave in the key ingredient that makes these blondies absolutely insane. And I’m not talking about the chopped up apples in these gems. I’m talking about the good old BUTTER that makes these bad boys so flipping good.

These apple blondies have one of my favorite baking ingredients: pasture-raised butter

Baking with butter is truly something that cannot be substituted in my opinion. There is something about the flavor and texture it adds to recipes and you can truly notice a difference when there is butter in a dessert versus when there isn’t.

Apple Blondies

Ingredients

  • 2/3 cup grass fed butter, softened
  • 1/2 cup brown sugar
  • 1 cup coconut sugar
  • 2 pasture-raised eggs
  • 1 teaspoon vanilla
  • 1/2 cup nuts (walnuts or pecans)
  • 2 cups gluten-free flour
  • 2 teaspoons baking powder
  • 1 cup of organic chopped apples

Instructions

  1. Preheat oven 350 degrees
  2. Grease 9×13 pan
  3. Cream butter and sugar
  4. Add eggs and vanilla
  5. Add flour and baking powder, stir well
  6. Stir apples and nuts
  7. Pour onto pan and bake for 30-35 minutes
