Sharing how I make my favorite BLT Chicken Salad. My go-to chicken salad filled with bacon, tomatoes, chives and it such an easy recipe to make.

I am OBSESSED with making chicken salad right now. It is hands down one of my favorite things to prep and keep in the fridge at all times. It is SO easy to make. And this BLT version is a great way to spice things up a bit with different mix-in’s. Plus you can serve this over a salad, bread, bagel, with crackers, anything you want. Not to mention that my kids LOVE it. We almost always have a batch of chicken salad in the fridge for anyone to eat and enjoy.

I also think this is one of those recipes that gets even more flavorful as the week goes by. I love eating it cold from the fridge once all the flavors marinate together for a bit. Same thing with tuna and egg salad too – anyone else?

What ingredients are in BLT Chicken Salad:

  • Chicken breasts – I love using roasted chicken from my cookbook or rotisserie chicken from the store!
  • Chicken thigh – adding the thighs is optional but it adds a lot more favor to the chicken salad in my opinion.
  • Bacon – I make some of my crispy oven bacon beforehand.
  • Celery – I love adding celery in here chopped up for a crunch.
  • Cherry tomatoes – okay fine I omit these for mine because I hate tomato lol!
  • Chives – my obsession with chives is REAL!
  • Mayonnaise – you can use any mayo you want.

How to make a healthy chicken salad lunch in 5 minutes:

  1. Diced the chicken breasts and thighs so they are cut into small pieces. You can also shred them in a kitchen mixer as well
  2. Add to large bowl with bacon, tomatoes, celery chives, salt and pepper and mix
  3. Mix in mayonnaise until fully combined (you can add more if needed)
  4. Serve with toasted bread, on top of a salad or however you desire

  • What do you put into chicken salad? Traditionally it’s cooked chicken, mayo, spices and any mix-in’s you want. We are using bacon, chives, and tomatoes to make it more of a BLT chicken salad.
  • How long does chicken salad stay good for? It is good for 5 days. I live by the 5 day rule for 95% of food. I love making a big batch of this earlier in the week and having it for quick meals all week long.
  • What do you like to serve with this chicken salad? I LOVE putting chicken salad on top of toasted bread like sourdough or an everything bagel. If you want something lighter, you can also put it into lettuce for lettuce wraps or serve it with some crackers.

The EASIEST chicken salad to make with a BLT twist.

Ingredients

  • 2 boneless chicken breasts, cooked
  • 1 boneless chicken thigh, cooked
  • 5 strips bacon, cooked
  • 1/2 celery stalk, choppe
  • 1/2 cup cherry tomatoes, diced
  • 2 tablespoons chives, chopped

*I love making this in advance. I find it more flavorful after 1-2 days too so all the flavors really marinate together.
