HOLY SMOKES! Where has this chicken salad recipe been my entire life?!

This isn’t just your average chicken salad everybody. It is taken up 10 levels thanks to some of my secret (JK they’re not a secret) ingredients in this salad.

I had a bunch of leftover roasted chicken the other day and wasn’t really sure what the beep to do with it. My mom and Jord are both obsessed with chicken salad and in Florida they were making it all the time. It really is the easiest way to use leftover chicken and it spices things up a bit too.

This Everything Bagel Chicken Salad is just what you need for an easy healthy lunch.

I love that you can add this chicken salad on top of toast or you can add to a salad itself or sweet potato toast if you are doing Whole30.   • Leftover roasted chicken (mine was a mix of breast and thighs!)
  • Organic mayo
  • Avocado
  • Dijon
  • Everything But The Bagel Seasoning

It is SO easy to make. And should stay good in the fridge for about 5 days or so.

Everything Bagel Chicken Salad (Whole30-friendly)

Sharing this insane Everything Bagel Chicken Salad that is Whole30-friendly and takes just 5 minutes to whip up for an easy lunch or dinner recipe!

Yield: 1-2 servings 1x

Ingredients

Scale
  • 1 cup shredded cooked chicken (I used leftover roasted chicken and was mix of breast + thighs)
  • 1.5 tablespoons organic mayo
  • Dash of dijon mustard
  • 1/4 avocado
  • Everything But The Bagel Seasoning (to taste)

Instructions

  • Add shredded chicken to a medium bowl
  • Spoon mayo, add avocado and sprinkle the seasoning on top
  • Mash everything together well then add to anything you’d like!
  • Sweet potato toast, on a salad or if not doing Whole30 add to bread like I did!

Notes

*Store leftovers in fridge for 5 days
