These Mini Gluten-free Granola Cups are not only the most adorable (yes I’m not describing food as adorable) breakfast but they are also so simple and easy to make and eat on the run.

One of your biggest requests is more “on-the-go” eats for breakfast and I gotchu covered boo. Make a batch of these on a Sunday or any day after work and you can eat them for breakfast for a few days. Kids love them and adults do too!

These granola cups are super versatile and you can pretty much add anything you want in them. I love doing yogurt, fruit, granola, nut butter, anything! But I do recommend adding the toppings in before eating in the morning so the bowl doesn’t get soft.

What ingredients are in these granola cups:

  • Flax egg or egg – either can work here! I typically use flax egg
  • Liquid coconut oil – or sub another liquid oil that is mild in flavor
  • Creamy nut butter – should be creamy not crunchy. I have used crunchy before and it impacts the consistency of the granola cup
  • Gluten-free rolled oats – quick oats may work too
  • Almond flour – or use oat flour
  • Cinnamon
  • Topping ideas: yogurt, granola and berries

How to make edible granola cups:

  1. Preheat oven to 350 degrees and line a muffin tin with liners
  2. Mix together the flax egg, coconut oil and nut butter and mix until creamy
  3. Add in the oats, almond flour, collagen and cinnamon and mix again
  4. Fill 9 muffin liners half way full then lightly pack mixture into cup, pushing up high on the sides to form the bowl
  5. Bake in the oven for 15-20 minutes then allow the bowls to cool for a bit before adding toppings
  6. I love adding coconut yogurt, fruit, granola and nut butter!

  • What can you fill these granola cups with? Anything you want! I love adding some yogurt, fruit, granola and nut butter to these!
  • Can you make these in a mini muffin tin too? Yes! Mini or regular muffin tin both work for these. Just watch the bake time if you do mini but it’s usually similar 15 minutes or so
  • Can you freeze granola cups? Yes! But I recommend freezing them without toppings inside as they stay better that way
  • What is the best way to eat these? We eat them room temp or cold from fridge and usually on the go. My kids love eating these for breakfast or a snack

Ingredients

  • 1 flax egg (1 tablespoon ground flax + 3 tablespoons water) or 1 egg
  • 1/3 cup liquid coconut oil
  • 1/4 cup creamy nut butter
  • 1 1/2 cup gluten-free rolled oats (quick oats may work)
  • 1/4 cup + 2 tablespoons almond flour
  • 1 teaspoon cinnamon
  • Topping ideas: yogurt, granola and berries

Notes

*Bowls will stay good in the fridge for 5 days. You can freeze them for 2 months as long as there are no toppings on them!
