In my almost 6 years of blogging, I have made about 3 soup recipes total and they all happen to be within the last 4 months HA!

I don’t know what I was waiting for. But now that I am on a soup making kick – there are so many ideas floating through my head that I can’t wait to share with you guys. But for this recipe, I have to think Jordan! He has been craving lentil soup and talking about it none stop. So obviously I had to go and make our own version of it to share with you guys.

And let me just say – I am still blown away by how good this turned out. Oh and how easy it is to make too. Basically all comes together in 30 minutes and you only dirty one pot to cook it. Needless to say, it is a dream.

You only need a few ingredients to make this too and I found them all in one store. Making it even easier to get the ingredients needed to make this soup!

What ingredients you need to make this easy and healthy vegan lentil soup!

  • Olive or avocado oil
  • Onion
  • Carrots
  • Celery
  • Baby potatoes, cut into quarters/slices
  • Veggie broth (or use bone broth or chicken broth)
  • Green lentils
  • Garlic powder, bay leaves, black pepper and sea salt

How to make lentil soup in just 30 minutes:

  1. In a large pot, add oil, onion, carrots and celery and heat over medium/high heat for about 5-7 minutes covered
  2. Add in potatoes and cook for another 3-5 minutes on medium heat, stirring occasionally
  3. Add in broth and bring to a low boil
  4. Next add in the lentils and spices and stir well
  5. Lower heat to medium/low and cook for about 20 minutes so the lentils and potatoes soften
  6. Serve soup while warm! I love pairing with some buttered toast too for the coziest meal ever!

Ingredients

Notes

*Store leftovers in fridge for 5 days. Or you can freeze for 2 months
