HOLY OMG you guys!!! I have *just* the smoothie recipe for you to make if you love mint chocolate chip ice cream and crave it on the regular (aka me). But want to be able to enjoy it for breakfast too,

Insert – this vegan Mint “Chocolate” Chip Smoothie recipe.

it is just the recipe to make to satisfy your ice cream craving but also take care of your gut microbiome at the same time. Which incase you are wondering – is now a term I chat about frequently thanks to my friends over at Seed. Seed is always giving us the rundown on gut health and poop (ha – see what I did there?!). The Seed team and I named this smoothie: The Mentha, Monounsaturated + Medium Chain Fatty Acid Master. 

Now you are probably wondering what that even means. But we named it after the ingredients you can find in the smoothie itself as you’ll see below.

  • Mint leaves are a broad group of plants—genus Mentha, of which there are many different species, subspecies, and hybrids of.
  • Medium Chain Fatty Acids (MCFA’s) are found at high levels in oil fraction of several plants, including coconuts.
    • MCFA’s have been studied for effects on energy and glucose metabolism.
    • Unlike long-chain fatty acids, MCFAs are able to cross the mitochondrial membrane of muscles without the mediation of the carnitine shuttle system. This makes MCFAs a readily available energy source!
  • Monounsaturated Fatty Acids (MUFAs) are found in many  nuts + plant oils, and have been studied for effects on lipid and inflammatory markers—
    • They are generally known to demonstrate favourable effects on the cholesterol profile— namely lowering LDL and increasing HDL.

Think of this smoothie as a powerhouse for your gut while only using 5 ingredients. And it is filled with fiber, energizes me and has me feeling healthy af every time I drink it. Plus our intestinal microbiome plays an important role in modulating risk of various chronic diseases and if I can add things into my diet to help that, why the beep not?!

What ingredients you need to make this healthier Mint Chocolate Chip Smoothie!

  • Frozen banana
  • Avocado
  • Baby spinach
  • Couple leaves of fresh mint (add more or less based off your preference!)
  • Full-fat coconut milk
  • Optional: Cacao nibs crushed on top + the cream part on top of the coconut milk can

The scoop on how to make this mint smoothie + a few other ideas:

  1. Add the banana, avocado, spinach, mint and milk to blender and blend until smooth and creamy
  2. Pour into glass of choice and top with coconut cream and cacao nibs if using and enjoy!
  3. *You can double or triple the recipe too and keep it on hand in freezer. I also love making this into popsicles for Ezra! Just pour into popsicle molds and store in freezer.

Ingredients

Scale
  • 1 frozen banana
  • 1/2 avocado
  • Handful of baby spinach
  • A couple leaves of fresh mint (add more or less based off your preference!)
  • 1/2 cup full-fat coconut milk
  • Optional: cacao nibs crushed on top + the cream part on top of the coconut milk can

Instructions

  1. Add the banana, avocado, spinach, mint and milk to blender and blend until smooth and creamy
  2. Pour into glass of choice and top with coconut cream and cacao nibs if using and enjoy!
