I love baking with them and pretty much look for any excuse to break out my jar of rainbow sprinkles for any occasion. And lately it is for these epic SUGAR COOKIE BARS!

These kind of remind me of my Doughy Chocolate Chip Cookie Bars meets Vegan Funfetti Sugar Cookies. They are sugar cookies in bar form and still perfectly moist and the outside has a little cookie crunch and crisp like we all love. I also frosted these, which I guess you can say is totally optional. But sugar cookies sans frosting are just not sugar cookies in my opinion.

This is the kind of recipe you will want to make over and over again. You can freeze some too so they are always on hand. And you can’t go wrong with any frosting you want on top. Just don’t forget to add the sprinkles but they are such a mood booster.

How to bake and store these vegan sugar cookie bars:

  1. Preheat oven to 350 degrees and grease an 8×8 baking dish and/or line with parchment paper
  2. In a large bowl, cream together butter, sugar, vanilla and milk until light and fluffy
  3. Add in flours and baking powder until fully combined
  4. Fold in sprinkles then press the dough into the baking dish and if you have time, let it sit in fridge for 10 minutes (it’s ok if not – I just think the bars stay together better if you pop in fridge before baking)
  5. Bake in oven for 18-22 minutes
  6. Allow the cookie bars to cool then ice and enjoy
  7. Store leftovers in airtight container for 3 days or in the fridge for 5 days. Or you can freeze for longer!
