These are a game changer for your latke game friends! The easiest latke recipe made in the air fryer (oven directions are below too) so your kitchen will be 100x less messy than when making them traditionally in a skillet. Still crispy, packed with flavor and extremely delicious.

It is officially latke time guys aka Hanukkah season is coming around when we basically eat latkes over here on repeat. One of the most beloved traditions in our family and for most who celebrate Hanukkah. Plus when you make latkes in an air fryer, you will see how much easier it is to make these compared to when you cook them in the skillet.

These crispy potato potatoes are an amazing side dish really for any meal or anytime of the year. I love having them for breakfast or breakfast for dinner action too with some eggs on top, smoked salmon, anything! And you can make a large batch and save leftovers in the fridge. I just reheat them in the oven, microwave or quickly on a skillet does the trick too.

And usually you know latkes are fried in a pool of oil. These are a lighter version that I just drizzle some oil on top of. Make them a bit healthier than the traditional version of latkes.

Tip: serve these with your go-to meal and don’t forget sour cream, applesauce and some fresh chives.

What ingredients you need to make air fryer latkes:

  • Russet potatoes – peeled with a box grater. You will need about 3 large potatoes to make these
  • Yellow onion – or use a white sweet onion if you prefer
  • Eggs – I don’t recommend a egg replacement here
  • Almond flour – I haven’t tried another flour for these
  • Tapioca flour – or use arrowroot flour if you want
  • Topping ideas: chopped fresh chives, sour cream and applesauce

How to make latkes in the air fryer:

  1. Preheat the air fryer to 400 degrees F or oven to 400 degrees F
  2. Grate the potatoes and onion on the large holes of a box grater
  3. Transfer the mixture to a kitchen towel and pull up the sides of the towel then squeeze out the moisture as much as possible
  4. Place the potato mixture in a large bowl and add the eggs, flours, salt, and pepper and stir until well combined
  5. Grease baking sheet, air fryer racks or basket with cooking spray (will depend on what kind of air fryer you have)
  6. Add about 2 tablespoons of potato mixture to the baking sheet and flatten to form a patty then repeat for remaining mixture (don’t overcrowd the air fryer or baking sheet!)
  7. Grease the tops with oil or spray with cooking spray
  8. Then cook in the air fryer for 8 minutes or oven for 8 minutes
  9. Flip them over, grease again and continue to cook for 5 more minutes, or until golden brown and crisp (if using oven you’ll need another 10 minutes or so!).
  10. Serve with desired toppings!

Tips for success:

  • Latkes are also known as a “potato pancake”. You only need a few simple ingredients to make these little fritters too like potatoes, eggs and some flour
  • Squeezing out the moisture in the potato onion mixture is KEY. If you don’t do this part well, your latkes won’t stay together and they won’t crisp at all
  • If you don’t have an air fryer, use the oven directions below. It will still work well! I also like to broil them a bit too to make the tops a little crispy in the oven
  • Russet potatoes are my go-to for latkes but you can also use yukon gold potatoes for a traditional verison
  • Drizzle some oil on top of the latkes before air frying or baking so they get extra crispy
  • These don’t turn out very oily and they are much cleaner to make than the traditional skillet kind so no need to place them on paper towels or anything to absorb grease like you would when making them over a skillet
  • If you want to make latkes for a large group, you can speed up the process by using a food processor to break down the ingredients too
  • Feel free to add any other desired spices you want to “spice” things up!
