Ever since making that Paleo Banana Zucchini Bread last week, I have been craving more and more zucchini bread recipes. It is one of my absolute favorite types of sweet breads to enjoy and these muffins are the perfect way to spice things up.

I love that these healthy Chocolate Zucchini Muffins are sweetened with just banana and they are paleo and vegan.

Ever since having Ezra, I have been a lot more aware of the sugars I add to my baked goods. Since I feel him a muffin or bread of sorts most mornings for breakfast, I try to keep things lower in sugar if possible. Usually the recipes are sweetened with just mashed banana (like this banana bread recipe) or they have just a little coconut sugar, honey or maple syrup.

These chocolate muffins though only have banana as the sweetener. Then of course the chocolate chips, which for any of my mamas out there looking for low sugar recipes, they are optional!

I also sneak in some extra veggie to this recipe thanks to the zucchini plus another little something special you’ll see in the recipe below.

Let’s run through what ingredients are needed for these Paleo Chocolate Chip Zucchini Muffins:

  • Flax eggs – you can also sub regular egg if you’d prefer
  • Mashed banana – how we get the muffins to be just a little sweet besides chocolate chips
  • Non-dairy milk – adds some extra creaminess
  • Coconut oil – liquid form! or melt solid coconut oil and let it cool a bit
  • Almond flour – I haven’t tested another flour yet
  • Cacao powder – needed to make these chocolatey!

  • Shredded zucchini

Ingredients

  • 1 medium banana, mashed
  • 2 flax eggs (1 tablespoon ground flax + 2.5 tablespoons water per flax egg)
  • 1/4 cup liquid coconut oil
  • 1/4 cup non-dairy milk
  • 1/2 teaspoon vanilla extract
  • 2 1/4 cup almond flour
  • 1/3 cup cacao powder
  • 1 teaspoon baking powder
  • 1/2 cup shredded zucchini (squeeze out moisture!)
  • 1 cup chocolate chips (code RACHL for free shipping)
  • Optional: 2 tablespoons mindbodygreen veggies+

Instructions

  1. Preheat oven to 350 degrees and line a muffin tin with liners or grease well
  2. In a large bowl, mix together banana, flax eggs, oil, milk and vanilla extract until smooth
  3. Mix in the almond flour, cacao powder, baking powder and veggies+ powder if using and mix until well combined
  4. Fold in zucchini and chocolate chips then fill about 6-7 muffin cups full of batter
  5. Bake in oven for 20-25 minutes, or until toothpick comes out clean
  6. Enjoy while warm
