When I was younger, my friends and I would want to make cakes and cookies all the time.
We would use a mix of sorts. Mix everything together and then eat the batter and nothing would end up even baking. I’m not sure it is the rebellious energy that comes with eating cookie dough in combination with how delicious cookie dough is. But what I do know.. ya girl lives for some cookie dough!
This cookie dough recipe is paleo, vegan-friendly and it is made with all healthy ingredients like almond flour, coconut sugar + coconut oil.
I created this recipe based off of my Almond Flour Chocolate Chip Cookies (paleo + vegan). They are hands down my favorite healthier cookie because of how doughy they are. And they are also one of the most popular recipes here on the blog.
I took a few of the key ingredients in that and modified it a bit to fit my dream cookie dough needs. I have to say, I am very impressed with how well it turned out. I have pretty much zero self control over this and tend to finish the batch in a day or two. But with it only taking 5 minutes to make, who cares?! You can easily whip this up anytime.
What ingredients you’ll need to make this edible cookie dough:
- Almond flour – I haven’t tested another flour here but you could use almond meal (more on almond flour here)
- Coconut flour – I haven’t tested another sub here
- Coconut oil – in liquid form but you can melt solid coconut oil and let it cool
- Coconut sugar – the main sweetener in here. I don’t recommend using a liquid sweetener as the consistency would be off
- Non-dairy milk – any variety works!
- Vital proteins collagen – totally optional here but I love adding it for an extra collegian and protein boost
- Dark chocolate – I always use this one, code RACHL for free shipping

Ingredients
- 3 tablespoons coconut oil, melted and cooled
- 1/4 cup coconut sugar
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 scoop Vital Proteins Collagen (optional! omit if vegan)
- 1/4 cup non-dairy milk
- 1/2 teaspoon vanilla extract
- 1/3 cup chocolate of choice, chopped (code RACHL for free shipping)
Instructions
- In a medium bowl, mix together all of the ingredients besides the chocolate chips until smooth and well combined
- Fold in chocolate and ENJOY! How easy was that?! No raw eggs scariness!
Notes
**If you’d like to bake these, add about 1/2 teaspoon baking powder or so then bake for 10-12 minutes. I’d assume you’d get around 6-8 cookies or so!

This was so dang good! I misread the coconut flour and instead added dried coconut chips. It was still amazing. Next time I’ll add both coconut flour and coconut chips to it!
