Quick and Easy Gluten-free Pancake for One! Stuffed with banana and chocolate chips and made with just a few healthy ingredients and this insanely good giant pancake is ready in under 10 minutes.
There is truly nothing better than a big a$$ pancake to eat all to yourself. Especially when it is stuffed with banana and chocolate chips for full on banana bread vibes.
This pancake recipe is a staple over here. It is made with only a few simple ingredients and you only need 10 minutes to whip it up for breakfast, lunch or a little breakfast for dinner action (my favorite). It gets super crispy on the edges and is seriously one of the most delicious pancake recipes I have ever had.
You can add in anything you want to the batter too like blueberries, apples, walnuts, anything! I just personally love tossing in some banana slices or mashed banana in the center with chocolate chips so the cake is filled with the most delicious flavors ever.
If you make this recipe, let me know what you think! I hope you love it as much as we do over here!

How to make this gluten-free pancake for one:

This was SO easy and delicious! I used King Arthur’s Measure for Measure GF flour and flax milk. The batter was super thick so I added a little extra flax milk. Otherwise, this was delicious and took me all of 5 minutes to make and enjoy. I plan on making these again this week!

These were so good! I used HiiT nutrition jet black cocoa (it’s such a game changer and not like other black cocoas) to give it an Oreo flavor and a pinch of vanilla. Oh my heaven!!! So so good!
