There is truly nothing better than a big a$$ pancake to eat all to yourself. Especially when it is stuffed with banana and chocolate chips for full on banana bread vibes.

This pancake recipe is a staple over here. It is made with only a few simple ingredients and you only need 10 minutes to whip it up for breakfast, lunch or a little breakfast for dinner action (my favorite). It gets super crispy on the edges and is seriously one of the most delicious pancake recipes I have ever had.

You can add in anything you want to the batter too like blueberries, apples, walnuts, anything! I just personally love tossing in some banana slices or mashed banana in the center with chocolate chips so the cake is filled with the most delicious flavors ever.

What ingredients you need to make the best pancake ever for yourself: 

  • Gluten-free oat flour (gf or regular all-purpose flour works too! I love using this flour – code RACHL for 15% off)
  • Non-dairy milk
  • Cinnamon

  • Mix in ideas: mashed banana + chocolate chips for center – I used these – code RACHL for free shipping
  • Maple syrup for topping

How to make this gluten-free pancake for one:

  1. In a medium bowl, mix together flour, baking powder, milk, cinnamon and collagen until smooth
  2. Heat a medium skillet and grease with a little oil, butter or ghee
  3. Scoop about 3/4 of the batter onto the the skillet and spread into desired pancake size
  4. Add the mashed banana on top in center and chocolate chips then pour rest of batter on top and spread
  5. Cook on medium/medium-low heat for about 3-5 minutes and when the bottom looks a bit golden, gently flip and cook for another 3-5 minutes on low heat
  6. Remove from skillet, add any desired toppings and enjoy!
