    Remember when I shared this recipe this morning and there was no text in the blog post?

    …mmkay! That is a sign that I need to get my ISH together. And by ISH I mean sh!t.

    I have been going a million miles a minute lately between blog work, book work and caring for my bubba. I am by no means complaining and I know there are many many other people who are in situations much more hectic and stressed than mine but I’d be lying if I didn’t say I have been feeling pretty blah.

    High cortisol has been a struggle of mine in the past and I already feel it creeping back in. I’m going to start doing everything I can do slow down and manage them a bit better, but I would love to hear from you guys if any of you struggle with this too. If so, I will definitely make an effort to share more about this journey and how I am handling it. Also would love to connect with anyone else in a similar boat.

    I think you guys will be the best of friends. In fact, I know you are the best of friends already after eating a dozen of these cookies in two days (but actually).

    I made these super soft and chewy banana bread cookies and they are officially going on the dessert rotation. You know, the list of my go-to recipes when I am craving dessert and want to make something for myself or for a friend (if they’re lucky…). These cookies are super flavorful and have that dreamy banana bread consistency (extra moist – yup!) but still taste and hold up like a chocolate chip cookie.

    They are gluten-free, nut-free and made with just a few simple ingredients that you likely already have on hand if you are a usual baker over here on the blog.

    I’m the queen of making a big mess while baking and recipe testing but when it comes to just making something for fun or because I am craving it, I’m not trying to dirty a dozen bowls over here to make one recipe. And I know you guys can relate 😉

    I mix in my go-to refined sugar-free dark chocolate from Hu Kitchen for the sweet chocolatey goodness in this recipe. I tend to mix it into the batter and sprinkle some chunks on top.     It feels like forever ago since I have shared a baked oatmeal recipe with you guys!

    Oatmeal bakes were actually one of the first recipes I used to make when I started experimenting in the kitchen. I loved how it combined a little cake-like dish with oatmeal for breakfast and how easy they are to make. I used to just toss in any mix-in’s and things we had in the fridge or pantry and make so many different types of baked oatmeals.

    This one though is hands down my favorite. I guess it could be because it has a bit of a banana bread theme (shocker) and I also think the ratio of oats to the other ingredients used are on point. It just soft on the inside and the outside has a little crunchy edge and “crust” of sorts.

    The best part about this recipe though?

    This gluten-free oatmeal bake is ready in just 25 minutes.

    And you’ll get 4-5 servings out of it so you are set for the week! I love adding a slice to my breakfast plate with some coconut yogurt, fresh fruit and granola on top.     Are you guys ready for a marathon of recipes the first couple weeks of February?

    We are quickly approaching the due date of our little dude (2/22) and I have front loaded a month’s worth of recipes into the first couple of weeks of the month. Sure, he could make his arrival tomorrow for all I know but at least I know my friends (aka you) have some delicious eats to keep you satisfied!

    I’m planning to take a “maternity leave” from 2/1-4/1, but TBH I have no idea what that means when you are working for yourself. Hopefully no emails (or limited emailing) and no new recipe development. Just eating as fuel, posting content that I prepped for you and just in the moment eats and loving with our bub. We shall see.

    But let’s get to this healthy Cinnamon Roll Banana Bread..

    I have been oh so excited to share this recipe with you guys since I first tested it last month. I truly think this is my favorite banana bread recipe on the blog ever and that is a very bold statement, I know. That’s for a few reasons though…

    This banana bread is unique compared to the others here on the blog. It is a bit more cake-like and has just the right amount of “moist” texture to it. The edges of the bread have a little crispy crunch and the flavors of banana bread swirled with cinnamon coconut sugar truly make me swoon. We are combining two of the best kind of breakfast recipes into one, what is not to love?

    This Cinnamon Roll Banana Bread is also gluten-free, nut-free and plant-based so it is very allergy-friendly for most. I use brown rice flour (one of my faves for gluten-free and nut-free baking!). I also bake this with flax egg and extra virgin coconut oil from Garden of Life. By now, you guys know that those two items are staples over here in the kitchen. I use them in so many recipes every week and the ground flaxseed is super versatile. You can sprinkle it on top of yogurt, blend in smoothies, make flax eggs from it, anything! And you know the low down with coconut oil, so I won’t bore you guys.
